要約(英語): Freezing has been used as a method of preserving agricultural products and foods. In refrigeration technology, it is important to detect the beginning and rate of freezing of food products. By measuring the internal temperature of foods, the beginning and frozen percentage of freezing can be detected. However, internal temperature measurements using contact thermometers such as thermistors and thermocouples cause food destruction and contamination. In this paper, using the difference in relative permittivity between water and ice, the frozen state of two 500 ml containers of water and two pears was measured. To measure agricultural products and foods with 130 mm or less, a large size parallel plate capacitor sensor with aluminum of the plate size of 180 mm × 130 mm and distance of 145 mm was built. At a measurement frequency of 5 MHz, the decrease in capacitance due to the increase of freezing rate was measured, and the frozen state of inside the sample was able to estimate.
